Chicken Tortilla Soup | Foodie Friday

Defying all my wishes, the weather here in Ohio has remained quite frigid. So, to combat this incessant cold, we are featuring another of our favorite soups for this month’s Foodie Friday, and this time it is Chicken Tortilla Soup! Not only is the soup fantastic with all it’s corn, black bean, and cilantro-y goodness, but when you top it with a little crushed tortilla chips, sliced avocado, shredded monterey jack cheese, and chopped green onion…well…it’s quite delectable 🙂  So here’s what you’re going to need to create this tasty goodness:

1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon dried oregano
1 (28 ounce) can crushed tomatoes
1 (10.5 ounce) can condensed chicken broth
1  1/4 cups water
1 cup whole kernel corn
1 cup white hominy
1 (4 ounce) can chopped green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1/4 cup chopped fresh cilantro
2 boneless chicken breast halves, cooked and cut into bite-sized pieces
crushed tortilla chips
sliced avocado
shredded Monterey Jack cheese
chopped green onions

You can either cook the chicken and then cut it, or as we prefer to do, you can cut it into the bite-sized pieces first, and then cook in a little olive oil over medium heat until fully cooked.

Next, chop the onion and mince the garlic.

In a medium stock pot, heat oil over medium heat. Saute the onion and garlic in oil until soft.

Then stir in the chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5-10 minutes.

Now, stir in the corn, hominy, chiles, beans, chopped cilantro, and chicken. Simmer for 10 more minutes.

While the soup is simmering, you can go ahead and chop the green onions, and slice the avocado if you’d like.

Ladle the soup into bowls and crumble tortilla chips on top, sprinkle on some green onion, throw on a few avocado slices, and top it off with a little Monterey Jack!

    Have you ever ate it at B.J’s Brewhouse? It is at Tuttle. I had it the other day it looked alot like yours it was the best I’ve ever had. 2 ideas for you. They included a lime wedge in the bowl before they added the soup. When I make it instead of crumbling chips, take a flour or corn tortia slice it into little strips. Have olive or veg. oil really hot drop these strips in just until golden, then drain & place on top of soup. I don’t know why but they are sooooo good. I’m going to try your reciepe. It looks so good. Thank you.

    I like to make slow-cooked coconut ginger pork. That chicken soup looks delicious. I love how you captured the pattern on the surface of the avocado pit. Gorgeous!
