Jeremy and I have been talking about doing this for at least a year and a half now, but just never got the time to sit down and talk out the details. But now it’s here and hopefully here to stay, because we really love this! It’s Foodie Friday! Basically, our plan is to bring a different recipe to the blog once a month on the last Friday of the month. We love to cook and try new foods together, so we thought it would be a lot of fun to blog our food adventures and share the recipes with you all. This first recipe is probably my favorite pumpkin dessert. After getting burned out on pumpkin pie from the holidays, give this simple and fun pumpkin bundt cake a try! Here’s what you’ll need:
2 1/4 cups all-purpose flour (*If using self-rising flour, omit baking powder and salt.)
1 1/2 cups sugar
1/4 cup butter, softened
1/4 cup vegetable oil
3/4 cup milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
4 large eggs
1 package (3.4 ounces) instant butterscotch pudding mix
1 cup canned pumpkin
2 teaspoons pumpkin pie spice (We leave this out and use 1 teaspoon cinnamon)
Alright, so here we go…While you’re getting everything ready you can preheat your oven to 350ºF.
Then, throw all of the ingredients into a large bowl…
Now you’re going to beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. (Gotta make sure everything is good and mixed 😉 Next, you’ll beat on high speed for 3 minutes, once again scraping the bowl, but only occasionally this time.
Now it’s time to grease your 10 in. fluted pan and lightly flour, then pour in that pumpkiny goodness.
Bake for 50-55 minutes or until you can poke it with a toothpick and have it come out clean. Let it cool in the pan for 10 minutes before moving it to a wire rack to finish cooling.
Dust with powdered sugar, or if you want, you can serve it with whipped cream.
We also had a little Crimson Cup Pumpkin & Spice coffee to go with it! So delicious 🙂
